Quinoa Veggie Salad with Feta and Shaken Lemon Vinaigrette

Ingredients: Shaken Dressing
  • 1/2 tsp. lemon rind, grated
  • 2 tsp. lemon juice
  • 1 tsp. honey
  • 2 tbsp. extra virgin olive oil
  • Kosher salt and fresh black pepper to taste
Salad
  • 3 cups cooked and cooled quinoa
  • 1/2 cup cherry tomatoes, quartered
  • 1/2 green bell pepper, chopped
  • 1/2 cucumber, peeled, seeded and chopped
  • 4 tbsp. feta or queso fresco cheese crumbled (optional)
  • 1 green onion, finely sliced
  • 2 tbsp. chopped soft herbs (cilantro, basil, parsley, dill, etc.)
Directions:
  1. Put the lemon rind, lemon juice, honey, and extra virgin olive oil into a glass jar with a pinch of salt and pepper
  2. Put the lid on the jar and shake well
  3. Add dressing and quinoa in a large bowl; toss well to coat in dressing
  4. Add remaining ingredients, mix together and serve
