Pear and Avocado Toast


  • 1/2 half ripe avocado
  • 1 slice whole wheat bread
  • Bosc or Asian pear
  • Lemon juice
  • Salt and pepper
  1. Mash 1/2 ripe avocado in a bowl
  2. Add a squeeze of fresh lemon juice and season to taste with salt and pepper
  3. Spread the avocado evenly on 2 slices of sourdough bread
  4. Add a layer of thinly sliced Bosc or Asian pear to 1 bread slice
  5. Cover with the other slice and press gently to adhere. Swap in pomegranate seeds for the pear, if you like
