
Baked Mac and Cheese
Make a batch the old fashioned way and convince the kids that cheese comes in colors other than orange.

- 3 cups uncooked macaroni
- 1 tablespoon butter
- 2 tablespoons flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups milk
- 1 cup shredded Cheddar cheese
- ½ cup grated Parmesan cheese
- ½ cup dry bread crumbs
- 2 tablespoons butter
- ¼ cup shredded Cheddar cheese
- 3 tablespoons grated Parmesan cheese

- Cook macaroni according to package directions
- Drain and set aside
- In a large, nonstick pan, melt butter over medium heat
- Stir in flour, salt and pepper until smooth. Cook one minute
- Gradually stir in milk
- Bring the mix to a boil and cook for two minutes, until thickened
- Remove from heat and stir in cheese, until melted. Mix cheese sauce into macaroni
- Lightly coat a 1½-quart baking dish with cooking spray
- Add macaroni, cover and bake for 20 minutes
- While macaroni is baking, mix together bread crumbs, remaining butter and cheeses
- Remove macaroni from oven and sprinkle with bread crumb mixture
- Bake uncovered for 10 more minutes or until golden brown
