Chimmy 1Healthy Recipe of the Month:  Crispy Baked Chimichangas

Chimichangas are typically deep fried and stuffed with beef or chicken, cheese and refried beans. To make this traditional dish healthy and kid-approved, we came up with a lighter twist that still tastes great.  This dish can be made in larger portions in advance, and then you can freeze and reheat when you’re in a hurry or need a quick snack.

Prep Time: 15 minutes

Cook Time: 12 minutes

Servings: 6

IngredientsChimmy 2

  • 6 tortillas

  • 1 egg white

  • 1 can refried beans (fat free)

  • 1 can El Pato Salsa de Chile Fresc0

  • 2 tsp Oil

  • Shredded Cheese

  • Desired Toppings:  Lettuce, tomato, cilantro, salsa, sour cream, plain yogurt


    1. Add egg whites to a bowl and mix with whisk.

    2. Add beans to the middle of your tortilla and sprinkle with cheese.

    3. Begin folding your tortilla.  Start with one side.  Fold up an inch and repeat with other three sides.  On the last side, add more egg whites before you make the fold.

    4. Fry the chimichangas.  Place them in the oiled pan on medium-high heat.  Cook on both sides for one minute until golden brown.  Remove the chimichangas and wrap them in foil.  Place them onto a baking sheet, seam-side down.

Bake at 350 for 12-15 minutes.
