Baked Sweet Potato

Makes: 4

Ingredients:
  • 4 medium sweet potatoes, unpeeled
  • 4 tbsp. unsalted butter or 2 tbsp. of coconut oil
  • Kosher salt and pepper
Directions:
  1. Heat oven to 400 degrees F
  2. Pierce each sweet potato several times with the tines of a fork
  3. Wrap each sweet potato, individually, with foil
  4. Place the sweet potatoes on a rimmed baking sheet
  5. Bake until tender, about 45 minutes
  6. Make a slit in the top of each sweet potato
  7. Top with 1 tbsp. of butter or coconut oil and season with the salt and pepper
