Recipe of the Month – Magic Ice Cream
This ice cream is magic for so many reasons. Number one, it’s healthy – no sugar or sweeteners whatsoever! Second, it requires only a couple of ingredients –bananas and almond milk. A quick blend makes a creamy, rich ice cream, thanks to its high pectin content. Next time your kids ask for ice cream, you’ll be able to tell them that they can have all the ice cream they want. For many parents, that’s the real magic!
(Makes 3-5 Servings)
- 2 ripe bananas
- ½ cup almond milk
Take the ripe bananas, slice them up and put them in a freezer safe bowl or freezer bag. Freeze for at least 2 hours. Place them in a blender or food processor and add almond milk. Blend until the texture reaches a smooth consistency.
For chocolate flavor, add 1 tablespoon of cocoa powder. For vanilla flavor, add 1 teaspoon of vanilla. You can also try adding in frozen strawberries or crumbled graham crackers, peanut butter, or sprinkle some cinnamon on top.
